The characteristic black rind, the soft and compact texture together with the quality of the milk from the Sardinian hinterland make Pecorino Perla Nera the most precious of the fresh pecorino from the Argiolas Dairy.
It is a young, fresh pecorino, matured for about a month, produced with raw sheep's milk. The paste is compact, very white and almost without holes. The scents are of milk, fresh butter, freshly cut grass, fresh flowers. The flavor is delicate and reflects the aromas, with a slight hint of sweetness that recalls honey.
