Occelli al Barolo is an Italian cheese made from pasteurized cow's milk, originating from the Langhe hills in Piedmont. This cheese is known as "drunken cheese" because it is aged in grape marc enriched with Barolo DOCG wine. The aging process gives the cheese a semi-hard texture and creamy paste. The rind is covered with grape marc, giving it a purple hue, while the flavor is sweet, slightly tangy, and with hints of red wine. Perfect to pair with great red wines like Barolo, Chianti, or Amarone.
