Asiago Cheese is an Italian cheese originating from the Asiago plateau, located between the provinces of Vicenza and Trento. This cheese comes in two main varieties: Asiago Fresco (Pressato) and Asiago Stagionato (d'Allevo). Asiago Fresco is made from whole cow's milk, has a soft texture, and a delicate, slightly sweet flavor. Asiago Stagionato, on the other hand, is made from partially skimmed milk and has a harder, crumbly texture, with a more intense and piquant flavor that develops during aging, which can last from 3 to 18 months. Perfect for enjoying on its own, paired with honey and jams, or as an ingredient in various recipes, Asiago is a versatile and beloved cheese.
