It is made from pasteurized cow's milk and has a semi-hard, smooth texture. The aging process can last from 25 to 120 days, giving the cheese an intense and pleasant flavor without being spicy. The rind is thick and rough, while the interior is a light color with small holes. The name "Bastardo" comes from the fact that it was historically made with a mixture of cow's, sheep's, and goat's milk. It is perfect paired with apples, berries, pears, pear mustard, and young red or medium-structured white wines.
